Homemade Pupusas (Salvadoran Stuffed Flatbreads)

Directions

  1. Mix the dough: In a large mixing bowl, combine the masa harina, warm water, and salt. Stir until a dough forms. This dough should be smooth and slightly tacky. The textures play a tremendous role in the overall success of your pupusas, so be sure to mix thoroughly.

  2. Divide the dough: Once the dough is ready, divide it into 8 equal-sized balls. You want them to be uniform for even cooking. If you’re feeling adventurous, you can adjust the size of the balls depending on your preference.

  3. Shape the pupusas: Take each ball of dough and flatten it into a disk, approximately 1/4 inch thick. The edge should be slightly thicker to hold the filling. Place a spoonful of cheese and your choice of savory filling in the center, keeping a little space around the edges.

  4. Seal the filling: Fold the edges of the disk over the filling and carefully reshape the ball into a smooth disk. Make sure there are no holes where the filling might escape during cooking. A good seal is essential for a tremendous eating experience.

  5. Cook the pupusas: Preheat a skillet over medium-high heat. Add a dab of oil if you like, but it’s not strictly necessary. Cook each pupusa for about 2-3 minutes on each side until they are golden brown and cooked through. The smell will fill your kitchen with delightful aromas, giving you a taste of what’s to come.

  6. Serve warm: Once cooked, serve your pupusas hot off the skillet, paired with curtido (a tangy cabbage slaw) and salsa. Enjoy the tremendous flavors and textures; they’re sure to bring joy to your family table.
