Mix the dough: In a large mixing bowl, combine the masa harina, warm water, and salt. Stir until a dough forms. This dough should be smooth and slightly tacky. The textures play a tremendous role in the overall success of your pupusas, so be sure to mix thoroughly.

Divide the dough: Once the dough is ready, divide it into 8 equal-sized balls. You want them to be uniform for even cooking. If you’re feeling adventurous, you can adjust the size of the balls depending on your preference.

Shape the pupusas: Take each ball of dough and flatten it into a disk, approximately 1/4 inch thick. The edge should be slightly thicker to hold the filling. Place a spoonful of cheese and your choice of savory filling in the center, keeping a little space around the edges.

Seal the filling: Fold the edges of the disk over the filling and carefully reshape the ball into a smooth disk. Make sure there are no holes where the filling might escape during cooking. A good seal is essential for a tremendous eating experience.

Cook the pupusas: Preheat a skillet over medium-high heat. Add a dab of oil if you like, but it’s not strictly necessary. Cook each pupusa for about 2-3 minutes on each side until they are golden brown and cooked through. The smell will fill your kitchen with delightful aromas, giving you a taste of what’s to come.

Serve warm: Once cooked, serve your pupusas hot off the skillet, paired with curtido (a tangy cabbage slaw) and salsa. Enjoy the tremendous flavors and textures; they’re sure to bring joy to your family table.
