Directions
-
Combine Ingredients: In a medium saucepan, combine the fresh blueberries, sugar, cornstarch, lemon juice, and water. Stir gently to ensure that the berries are generously coated with the sugar mixture, allowing their tremendous flavor to shine through.
-
Cook the Filling: Place the saucepan over medium heat. Stir the mixture frequently as you bring it to a gentle boil. You’ll see the blueberries start to release their juices as the temperature rises.
-
Thicken the Mixture: Continue to cook, stirring constantly, until the mixture begins to thicken and bubble, which should take about 5–7 minutes. This helps to create that desired luscious texture in the filling.
-
Cooling: Once the mixture has thickened, remove the saucepan from the heat and allow the filling to cool slightly. Keep in mind that the filling will thicken further as it cools.
-
Prepare the Pie Crust: While the filling is cooling, preheat your oven to 425°F (220°C). If using a pre-made pie crust, fit it into your pie dish.
-
Fill the Pie: Pour the cooled blueberry filling into the prepared pie crust. Ensure the filling is spread evenly. If desired, dot the top with small pieces of butter for added richness.
-
Bake the Pie: Place the pie in the preheated oven and bake for about 30–35 minutes or until the crust is golden brown and the filling is bubbling joyfully.
-
Cooling Before Serving: Once baked, remove the pie from the oven and let it cool for at least 2 hours. This cooling period allows the filling to set properly, making it easier to slice and serve later.
