Heavenly Raspberry White Chocolate Mousse Parfait

Directions

  1. Make the Raspberry Sauce: In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat, stirring gently until the raspberries break down, about 5 minutes. It’s a tremendous moment when the mixture turns into a luscious sauce. Next, stir in the cornstarch mixed with water and cook for another 2 minutes until thickened. Remove from heat and allow it to cool.

  2. Prepare the White Chocolate Mousse: Melt the white chocolate in a heatproof bowl set over a pot of simmering water, known as a double boiler. Stir the chocolate gently until it melts and is smooth. Set aside to cool to room temperature. The tremendous aroma of melted chocolate is simply irresistible!

  3. Whip the Cream and Combine: In a separate bowl, whip 1 cup of heavy cream with the vanilla extract until stiff peaks form. Finally, fold in the whipped cream until everything is well combined, creating a heavenly mousse.

  4. Assemble the Parfaits: In serving glasses or jars, start layering. Begin with a spoonful of white chocolate mousse, followed by a layer of raspberry sauce and some fresh raspberries. Repeat the layers until the glasses are filled, ensuring the last layer is a fluffy mousse.

  5. Garnish: Top each parfait with a few fresh raspberries and adorn with chocolate shavings or curls. This adds a beautiful finish that makes each serving look professionally crafted.
