Heavenly Carrot Cake Bars

Directions

  1. Preheat the oven to 350°F (175°C). Ensuring your oven is at the correct temperature is vital for achieving that perfect texture in the bars.

  2. Prepare the crust by mixing the grated carrots, crushed ginger snaps, brown sugar, melted butter, ground cinnamon, and nutmeg together in a large bowl. The warm spices will create a tremendous aroma as they blend together. Once combined, press this mixture firmly into the bottom of a greased 9×13-inch pan.

  3. Make the cream cheese filling by beating the softened cream cheese with the granulated sugar until the mixture is smooth and free of lumps. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Pour this luscious cream cheese mixture over the crust, spreading it evenly to ensure every bite is delightful.

  4. Prepare the topping by mixing together the crushed frosted flakes, chopped pecans, caramel sauce, and the remaining grated carrots in a separate bowl. This combination will add tremendous flavor and texture to the bars. Evenly sprinkle this mixture over the cream cheese layer.

  5. Bake in the preheated oven for about 45 minutes or until the center is set and the edges start to turn a light golden color. Once done, take the pan out of the oven and allow it to cool completely. For the best flavor, chill the bars in the refrigerator before serving.
