Ingredients
The Base
- 150g digestive biscuit crumbs
- 75g unsalted butter, melted
- 10g sugar
The Caramel Layer
- 40g granulated sugar (for caramel layer)
- 50ml heavy cream (for caramel layer)
- 30g unsalted butter (for caramel layer)
- A pinch of sea salt (for caramel layer)
The Mousse Filling
- 3 ripe bananas, pureed
- 200g cream cheese, softened
- 75g powdered sugar
- 1 teaspoon vanilla extract
- 200ml heavy cream, whipped to stiff peaks
For Topping
- 2 sliced bananas (for topping)
- Caramel glaze (using leftover caramel from the layer)
- Crushed biscuit crumbs (for garnish)
