Heavenly Banana Mousse Tart

Ingredients

The Base

  • 150g digestive biscuit crumbs
  • 75g unsalted butter, melted
  • 10g sugar

The Caramel Layer

  • 40g granulated sugar (for caramel layer)
  • 50ml heavy cream (for caramel layer)
  • 30g unsalted butter (for caramel layer)
  • A pinch of sea salt (for caramel layer)

The Mousse Filling

  • 3 ripe bananas, pureed
  • 200g cream cheese, softened
  • 75g powdered sugar
  • 1 teaspoon vanilla extract
  • 200ml heavy cream, whipped to stiff peaks

For Topping

  • 2 sliced bananas (for topping)
  • Caramel glaze (using leftover caramel from the layer)
  • Crushed biscuit crumbs (for garnish)
