Healthy Banana Oatmeal Pancakes (Quick & Easy!)

Directions

  1. Preheat Your Skillet: Begin by placing a skillet on low heat. It’s vital to preheat it slowly to ensure even cooking of the pancakes. Use medium-low heat for tremendous results.

  2. Prepare the Batter: In a blender, combine the ripe bananas, eggs, and oats. Blend on low speed until the mixture is smooth but still retains a bit of texture. This adds a wonderful mouthfeel to the pancakes.

  3. Grease the Skillet: Lightly grease your skillet with cooking spray, butter, or a splash of oil. This prevents the pancakes from sticking and allows for a nice golden brown color.

  4. Pour and Shape the Batter: Once your skillet is ready, pour about 1/6 of the batter onto the skillet for each pancake. Remember, smaller pancakes hold together better, as these have a tendency to be a bit delicate.

  5. Cook Through One Side: Allow the pancakes to cook thoroughly on one side before flipping. If using mix-ins such as walnuts or blueberries, gently press them into the uncooked side of the pancake. This will keep them from sinking into the batter and falling apart.

  6. Flip and Continue Cooking: Once the edges look set and bubbles form on top, gently flip the pancakes. Cook them for another minute or so until nicely browned. Repeat this process with the remaining batter.
