Hawaiian Poke Cake

Directions

  1. Preheat the oven: Begin by preheating your oven to 350°F (175°C). This essential step ensures that your cake bakes evenly and develops a lovely golden color.

  2. Prepare the baking dish: Grease a 9×13 inch baking dish with butter or non-stick cooking spray. Make sure the dish is well coated to prevent the cake from sticking.

  3. Mix the cake batter: Follow the package instructions for the yellow cake mix. Typically, this involves combining the mix with water, oil, and eggs in a mixing bowl. Stir until the batter is smooth, ensuring there are no lumps.

  4. Pour into the dish: Once mixed, pour the batter into the prepared baking dish. Spread it evenly with a spatula for a consistent bake.

  5. Bake the cake: Place the dish in the preheated oven and bake for 25-30 minutes or until the cake is golden brown. A toothpick inserted into the center should come out clean, which is a tremendous indicator that your cake is ready.

  6. Cool and poke holes: After baking, allow the cake to cool slightly for about 10 minutes. Use a fork to poke holes throughout the top of the cake, ensuring they are evenly spaced. This step allows the delicious liquids to soak into the cake.

  7. Prepare the topping: In a bowl, mix the pineapple juice and coconut milk together until well combined. This luscious mixture will penetrate the holes in the cake and elevate the flavor.

  8. Soak the cake: Pour the pineapple juice and coconut milk mixture evenly over the cooled cake. Allow it to soak in for a few minutes to ensure the cake absorbs all of that tremendous flavor.

  9. Add shredded coconut: While the cake is still moist, sprinkle the sweetened shredded coconut generously on top, making sure to cover the surface for an attractive presentation.

  10. Finish with whipped topping: Take the whipped topping and spread it generously over the top of the cake. Use a spatula to create a smooth surface.

  11. Garnish: Finally, add the drained pineapple chunks and the maraschino cherries on top for a pop of color and flavor. This garnish adds a delightful finish and makes the cake look appealing.
