Hawaiian Pineapple Cake

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch pan to ensure your cake lifts out easily after baking.

  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Mix these dry ingredients together until they are fully blended. This step is crucial for a uniform flavor throughout the cake.

  3. In another bowl, mix the eggs, vegetable oil, pineapple juice, and vanilla extract. Whisk these wet ingredients together until they are smooth.

  4. Add the wet ingredients to the dry ingredients. Stir the mixture gently until it is just combined; do not overmix. You want a moist cake, and overmixing can often lead to a dense texture.

  5. Fold in the crushed pineapple carefully. This adds not only flavor but also tremendous moisture to the cake, making it irresistible.

  6. Pour the batter into the prepared pan and smooth the top with a spatula. Making sure the batter is level will ensure even baking.

  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Keep an eye on the baking time; each oven can vary slightly.
