- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan to prepare for baking.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. The combination of these dry ingredients creates a tremendous base for your cake.
- In another bowl, mix the sugar, vegetable oil, eggs, and vanilla extract until well combined. This mixture will provide moisture and sweetness.
- Stir in the grated carrots and crushed pineapple to the wet mixture, ensuring the fruits and veggies are evenly distributed.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this could lead to a denser cake rather than the desired light, fluffy texture.
- Pour the batter into the prepared baking pan and smooth the top with a spatula. This helps achieve a tremendous, even bake.
- Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the cake as it bakes, as ovens can vary significantly.
- Allow the cake to cool completely before serving it. This cooling time is important for the flavors to develop even further.
