Hawaiian Carrot Pineapple Cake

Directions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan to prepare for baking.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. The combination of these dry ingredients creates a tremendous base for your cake.
  3. In another bowl, mix the sugar, vegetable oil, eggs, and vanilla extract until well combined. This mixture will provide moisture and sweetness.
  4. Stir in the grated carrots and crushed pineapple to the wet mixture, ensuring the fruits and veggies are evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this could lead to a denser cake rather than the desired light, fluffy texture.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula. This helps achieve a tremendous, even bake.
