In a large pot, heat the oil over medium-high heat. Add the beef stew meat and brown it on all sides until lightly crusted. This step adds tremendous depth to the stew’s flavor.

Once browned, add the diced onion and minced garlic. Sauté the mixture until softened and fragrant, allowing the tremendous aroma to fill your kitchen.

Stir in the roasted Hatch chiles, cumin, oregano, salt, and black pepper, ensuring the meat is well-coated in seasonings.

Pour in the beef broth and bring the mixture to a boil. This will enhance the richness and allow the flavors to meld beautifully together.

Once boiling, reduce the heat to a simmer. Let it cook for about 30 minutes, allowing the tender meat to absorb all the tremendous spices.

Next, add the peeled and cubed potatoes, sliced carrots, and peas, if using. Continue to simmer for another 30–40 minutes, or until the vegetables are tender.

For a thicker stew, whisk together 2 tablespoons of flour or masa with a bit of warm broth to create a slurry. Stir this into the pot, and let it simmer for an additional 5–10 minutes until thickened.

Before serving, taste and adjust the seasoning according to your preferences.

Serve the Hatch Green Chile Stew piping hot, accompanied by warm tortillas or fry bread for a complete and satisfying meal.
