Ingredients
The Filling
- 1.5–2 lbs beef stew meat (or pork)
- 1 tbsp oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1.5–2 cups roasted Hatch green chiles, chopped
The Base
- 4 cups beef broth
- 4 potatoes, peeled and cubed
- 2–3 carrots, sliced
- 1 cup frozen or canned peas (optional)
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt (to taste)
- 1/2 tsp black pepper
- Optional: 2 tbsp flour or masa slurry for extra thickness
