Hatch Green Chile Stew – Thick & Chunky


Ingredients

The Filling

  • 1.5–2 lbs beef stew meat (or pork)
  • 1 tbsp oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1.5–2 cups roasted Hatch green chiles, chopped

The Base

  • 4 cups beef broth
  • 4 potatoes, peeled and cubed
  • 2–3 carrots, sliced
  • 1 cup frozen or canned peas (optional)
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper
  • Optional: 2 tbsp flour or masa slurry for extra thickness
