Directions

  1. Prepare the Dough: In a large mixing bowl, combine masa harina, warm water, and salt. Stir until a dough forms. The dough should be soft but not sticky. If it feels too dry, add a teaspoon of water at a time until it reaches the desired consistency.

  2. Shape the Gorditas: Divide the dough into small balls, roughly the size of a golf ball. Flatten each ball into a round disk about 1/2 inch thick. The thickness of the gorditas is important for achieving that wonderful fluffy texture.

  3. Cook on the Skillet: Heat a skillet or griddle over medium-high heat. Place the flattened dough rounds on the skillet and cook them for about 3-4 minutes on each side until they are golden brown and slightly puffed. You want that tremendous golden exterior that adds flavor and texture.
