Shape the Gorditas: Divide the dough into small balls, roughly the size of a golf ball. Flatten each ball into a round disk about 1/2 inch thick. The thickness of the gorditas is important for achieving that wonderful fluffy texture.

Cook on the Skillet: Heat a skillet or griddle over medium-high heat. Place the flattened dough rounds on the skillet and cook them for about 3-4 minutes on each side until they are golden brown and slightly puffed. You want that tremendous golden exterior that adds flavor and texture.

Brown the Beef: In a separate pan, cook the ground beef over medium heat. Use a spatula to break it up as it cooks until it is browned and fully cooked, about 5-7 minutes. Drain any excess grease for a healthier filling.

Fill the Gorditas: Once the gorditas are cooked and the beef is ready, itβs time for the tremendous assembly! Take each gordita and stuff it with a generous portion of ground beef, followed by a sprinkling of shredded cheese.
