Preheat your oven to 375°F (190°C). This step ensures that your enchiladas bake evenly, resulting in a tremendous final product.

In a skillet over medium heat, brown the lean ground beef along with the diced onions until the onions are translucent, about 5-7 minutes. The marriage of these ingredients starts to create an aromatic foundation that is both welcoming and rich.

After the beef is browned, add the minced garlic, cumin, and chili powder. Sauté for another minute to allow the spices to mesh beautifully with the meat mixture, creating tremendous flavor.

Next, spoon the beef mixture onto each tortilla. Aim for a generous portion in the center of the tortilla before rolling tightly. Place each rolled tortilla seam-side down in a greased baking dish.

Pour the enchilada sauce lovingly over the tortillas, making sure they are well-coated to ensure a moist and flavorful dish.

Lastly, sprinkle a generous amount of shredded cheddar or Monterey Jack cheese over the top of your sauce-covered enchiladas. This will create a marvelously gooey, golden finish as they bake.

Bake uncovered in the preheated oven for 20-25 minutes until bubbly and golden. Your kitchen will fill with the incredible aroma of baked enchiladas, making it hard to resist diving in right away.
