Begin by prepping the pineapple. Use a sharp knife to carefully cut off the top and bottom of the pineapple, creating a flat surface. This will stabilize the fruit as you slice it. Remove the rind, exposing the juicy flesh within. With the pineapple now looking beautiful, either cut it into 3/4-1-inch spears or rings, depending on your preference. If you choose rings, use a small cutter to remove the core for the best mouthfeel.

Once your pineapple is nicely chopped, place the pieces into a large zip-top bag and set it aside. This allows for easy marinating.

Now, in a small bowl, whisk together the melted butter, dark brown sugar, rum (if you’re using it), ground cinnamon, and a pinch of salt until everything is thoroughly combined. This mixture will be the reason for that tremendous burst of flavor.

Pour this delightful marinade over the pineapple pieces in the zip-top bag. Gently toss to ensure every piece is coated evenly with the incredible mixture. Once everything is mixed, let it sit in the refrigerator for about 20-30 minutes. This step not only enhances flavor but also prepares the fruit for grilling.

While the pineapple marinates, prepare your grill or grill pan. Warm it over medium heat until the temperature reaches between 375-400°F.

After your grill is prepped and the pineapple has marinated, it’s time to start grilling. Place the fruit on the grill and cook for 4-6 minutes on each side. While grilling, brush each side with the excess marinade that has pooled in the bag.

Once you see those beautiful golden-brown grill marks forming and the pineapple softens, it’s time to remove the fruit from the grill. Transfer the grilled pineapple to a platter and serve immediately for the best taste experience. Enjoy this tremendous tropical delight!
