Directions
-
Right before cooking, prepare your peaches by slicing them along the seam and remove the pits. This technique allows for easy cooking and helps the peaches keep their shape on the grill.
-
Coat the peaches in oil for cooking. Use enough oil to give them a thick, even coating. One effective method is to place the halved peaches in a gallon-size Ziplock bag, add the oil, and gently rub the oil into the peach halves. This reduces mess, which is critical when you might be in the backyard, far from access to a sink.
-
It is important not to use extra virgin olive oil in this recipe. Its lower smoke point can lead to burnt and smoky flavors that can detract from the natural sweetness of the peaches.
-
Place the peaches on the grill cut side up. Grill them for about 5-6 minutes. You’ll know they’re ready when they start to sizzle and shine.
-
Carefully turn the peaches over onto their skin side. Grill for another 6-7 minutes or until they soften and lose a little bit of their shape. The key is to maintain a watchful eye to avoid overcooking them.
-
Serve the grilled peaches immediately, either plain, or with a generous sprinkle of whipped cream or a scoop of ice cream on top. Their warm and juicy profile pairs beautifully with creamy elements.
-
If you have leftovers, you can reheat any grilled peaches in the microwave for about 30 seconds. They will taste just as great the second time around, providing a delightful reminder of their tremendous flavor.
