Green Chile Cast Iron Enchiladas

Ingredients

The Filling

  • 1 tablespoon olive oil
  • 1/2 lb ground beef or ground pork (optional for vegetarian)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 1/2 cups green chile enchilada sauce
  • 1 cup roasted green chiles, chopped

The Base

  • 6 small corn tortillas, torn into pieces
  • 2 cups shredded Monterey Jack or mozzarella cheese
  • 1/2 cup shredded cheddar cheese

For Serving (Optional)

  • Shredded lettuce
  • Diced tomatoes
  • Chopped onion
  • Sour cream
