Greek Chicken Bowls

Directions

  1. Begin by marinating the chicken breasts in a mixture of olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Let them sit for at least 30 minutes to absorb the tremendous flavors.

  2. Heat your grill or a pan over medium-high heat. Once hot, add the marinated chicken breasts and cook until they are fully cooked through, approximately 6-7 minutes per side. Look for a golden-brown exterior that is irresistible.

  3. While the chicken cooks, take a moment to prepare the tzatziki sauce. In a medium bowl, mix together the yogurt, grated cucumber, minced garlic, dill, and lemon juice. Stir well to combine, then set it aside. This homemade sauce adds a tremendous coolness that complements the chicken perfectly.

  4. Next, chop the cucumbers, tomatoes, and red onion. The fresh veggies add crunch and vibrancy to the dish. Arrange them on a cutting board and slice them into bite-sized pieces.

  5. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Then, slice the chicken into strips. This will make it easier to assemble the bowls.

  6. Now, it’s time to build your Greek chicken bowls! Start with a base of sliced chicken, then layer in the chopped vegetables, crumbled feta cheese, and optional pita bread for an extra touch.

  7. Drizzle the homemade tzatziki sauce generously over the top of each bowl. The cool, tangy sauce will elevate the flavors of every component.
