Greek Chicken Bowls

Directions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. This marinade will infuse tremendous flavor into your chicken. Once combined, add the chicken breasts, ensuring they are well-coated. Cover the bowl and let the chicken marinate for at least 30 minutes. For maximum flavor, consider refrigerating it for a few hours.

  2. Preheat your grill or grill pan to medium heat. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through. A tremendous aroma will fill the air as the chicken develops lovely grill marks. Once fully cooked, remove the chicken from the grill and let it rest. This resting period allows the juices to redistribute, ensuring the chicken remains tender. After a few minutes, slice the chicken into strips.

  3. While the chicken is resting, prepare the tzatziki sauce. In a separate bowl, mix together the Greek yogurt, chopped dill, lemon juice, and a pinch of salt. This sauce will be a tremendous companion to your chicken and fresh toppings, adding a refreshing zing.

  4. To assemble your Greek Chicken Bowls, start with a base of rice or quinoa as the foundation. Place a generous portion of the sliced grilled chicken on top. Next, add the diced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives. Each ingredient brings its own flavor and texture, creating a delightful medley.

  5. Finally, drizzle the tzatziki sauce over the assembled bowls and sprinkle with crumbled feta cheese. Serve immediately for a tremendous and vibrant meal that is sure to please.
