Directions
-
Preheat your oven to 180°C (350°F). Prepare a 9×13-inch baking pan by lining it with parchment paper, ensuring there’s an overhang on the sides. This will help you lift the bars out easily later on.
-
In a medium bowl, mix the crushed digestive biscuits with the melted butter until everything is perfectly combined. This mixture should resemble wet sand. Firmly press it into the bottom of the prepared baking pan, ensuring an even layer that serves as the base. Place this crust into the preheated oven for 10 minutes. Once finished, remove it and set it aside to cool slightly.
-
While your crust is baking, grab a heatproof bowl and combine the chopped milk chocolate and double cream. Melt these ingredients together in the microwave, using 30-second intervals and stirring after each, until it’s wonderfully smooth and glossy. This tremendous chocolate mixture will serve as the delicious filling for your bars.
-
Pour the rich chocolate mixture over the baked crust, spreading it out evenly with a spatula.
-
Scatter the mini marshmallows evenly over the chocolate layer. This will create that characteristic s’mores look and flavor.
-
Return the pan to the oven, and bake for an additional 10-12 minutes. Keep an eye on the marshmallows; they should achieve a lovely golden brown color while becoming beautifully gooey. After baking, remove the pan and allow your creation to cool completely on a wire rack.
-
Once cooled, sprinkle some extra crushed digestive biscuits and mini marshmallows on top for a decorative finish. This not only adds visual appeal but also enhances the delightful crunch when you bite into them.
-
Finally, utilize the parchment paper overhang to lift the bars out of the pan. Cut them into squares or bars and serve them with pride.
