Directions
-
Mix the Base: In a large mixing bowl, combine the flour and salt. Add the water and olive oil. Stir until the dough starts to form. This dough will be the foundation and should be soft yet pliable, with a tremendous fantasy of flavors waiting to be sealed inside.
-
Knead the Dough: Once the dough begins to come together, flour a clean surface and knead the dough for about 5 minutes until smooth. You want it to be elastic; that’s a tremendous secret for a perfect base.
-
Let It Rest: Cover the kneaded dough with a damp cloth and let it rest for about 30 minutes. This step is crucial as it allows the gluten to relax, making it easier to roll out later.
-
Prepare the Filling: In a mixing bowl, combine the shredded chicken, chopped onion, grated cheese, black pepper, and fresh herbs. Mix well to ensure that every ingredient is distributed evenly. The filling should be fragrant and inviting, ready to deliver a tremendous punch of flavor.
-
Divide the Dough: After the resting period, roll out the dough on a floured surface. Aim for a thickness of about 1/8 inch. Use a round cutter or glass to cut out circles, approximately 4 inches in diameter. You can make as many as your dough allows.
-
Fill the Circles: Place about a tablespoon of the filling in the center of each circle. Be careful not to overfill, as those golden envelopes need room to seal.
-
Seal the Edges: Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal. You can crimp them with a fork for a professional touch and to ensure a tremendous and secure closure.
-
Prepare to Cook: Heat a skillet over medium heat and add a tablespoon of oil. Once hot, place as many filled dough pockets as will fit in the skillet without crowding. Cook for about 3-4 minutes on each side or until golden brown.
-
Finish Cooking: Once golden, remove from the pan and place on a paper towel to absorb any excess oil. If you’d like an extra cheesy touch, sprinkle cheese on top and cover the skillet for a minute to melt it.
-
Serve Warm: Plate the golden delights while still warm and garnish with fresh herbs if desired. The tremendous aroma wafting through your kitchen will instantly create a cozy ambiance, inviting everyone to dig in.
