Directions
-
Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This temperature will ensure even baking and a nice rise. Grease and flour two 9-inch round cake pans to prepare them for the batter.
-
Melt the Chocolate: In a double boiler or microwave, melt the semisweet chocolate until smooth. Be sure to let it cool slightly before adding it to the batter.
-
Mix the Dry Ingredients: In a medium bowl, combine the flour, cocoa powder, baking soda, and salt. This dry mixture will contribute significantly to the total texture and flavor of the cake.
-
Create the Batter: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. Add in the cooled melted chocolate and vanilla extract, mixing well to incorporate.
-
Add the Eggs: Introduce the eggs, one at a time, to the butter mixture. Be sure to mix well after each addition to maintain a smooth and consistent batter.
-
Combine Wet and Dry Ingredients: Alternately add the flour mixture and buttermilk to the butter mixture. Start and end with the flour mixture, stirring gently until just combined. This method ensures that your cake layers will be tender and moist.
-
Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Once finished, allow the cakes to cool in the pans for around 10 minutes before transferring them to a wire rack to cool completely.
-
Prepare the Frosting: For the coconut pecan frosting, combine the shredded coconut, chopped pecans, sugar, milk, and egg yolks in a medium saucepan. Cook this mixture over medium heat, stirring constantly, until it thickens. This should take approximately 10-15 minutes. Remove the saucepan from heat and let the frosting cool slightly before using.
-
Frost the Cakes: Once the cakes have cooled completely, generously spread the coconut pecan frosting over the top of one cake layer, then carefully place the second layer on top. Finish by frosting the top and sides of the entire cake, ensuring a beautiful presentation.
