Start by patting the cod dry with paper towels. This step is crucial as it helps the seasoning adhere better and ensures the fish gets that tremendous sear. Season the cod fillets with salt, black pepper, paprika, and the juice of half a lime. Set it aside and let the flavors mingle.

Next, heat the olive oil and butter in a large skillet over medium heat. Once the butter has melted and begins to foam, add the minced garlic. Sauté for about 30 seconds, stirring frequently, until the garlic becomes fragrant but not browned. This tremendous aroma will fill your kitchen with a delightful warmth.

Carefully place the seasoned cod strips in the skillet. Cook for 2-3 minutes on one side until golden brown, then flip them over and cook for another 2-3 minutes until the fish is golden and flaky. Once cooked through, remove the cod from the heat and let it rest for a moment.

While the cod rests, prepare the sauce. In a small bowl, mix together the sweet chili sauce, fresh lime juice, honey (if using), soy sauce or fish sauce (if desired), and the finely grated garlic or ginger. This sauce adds a tremendous burst of flavor that perfectly complements the richness of the garlic butter.

Finally, drizzle the sauce over the cod strips or serve it on the side. Don’t forget to spoon some of the extra garlic butter from the pan on top of the cod for that extra richness.
