Directions
-
Cook the fettuccine pasta according to package instructions. Be sure not to overcook; al dente is best for texture. Drain and set aside.
-
In a large skillet, heat the olive oil and butter over medium heat. When the butter melts and starts to foam, it’s time to proceed.
-
Add the minced garlic to the skillet and sauté until fragrant, about 1-2 minutes. The smell will be tremendous and will make your mouth water!
-
Next, add the chicken pieces to the skillet. Season them with salt and pepper to taste. Cook the chicken until it turns golden brown and is thoroughly cooked, which should take about 6-8 minutes, depending on its size.
-
While the chicken is cooking, in a separate bowl, whisk together the heavy cream, ricotta cheese, and Parmesan cheese until smooth. This creamy mixture will be the heart of your sauce.
-
Once the chicken is cooked, pour the cheese mixture into the skillet with the chicken. Stir it well to combine everything harmoniously.
-
Now, add the cooked fettuccine pasta to the skillet. Toss it gently to coat each strand with that tremendous, creamy sauce.
-
Finally, serve the pasta warm, garnished with freshly chopped parsley for a pop of color and flavor. Enjoy the delightful meal!
