Garlic Butter Beef Bites with Potatoes

Directions

  1. Begin by gathering all your ingredients. It’s time to prepare that tremendous feast! Cut the beef stew meat into bite-sized pieces, making sure they are uniform for even cooking.

  2. Next, halve the baby potatoes to ensure they cook evenly. Optional: To speed up cooking and soften them slightly, you can parboil the baby potatoes for a few minutes in salted water. This step is not mandatory but can help ensure they become melt-in-your-mouth delicate by the end of the cooking process.

  3. Heat a tablespoon of olive oil in a large skillet over medium-high heat. It’s time to sear those beef bites! Cook the beef until it is browned on all sides, which typically takes about 4-5 minutes. This step seals in tremendous flavor and creates a nice crust on the outside of the meat.

  4. While the beef is searing, take a small bowl and combine the melted butter with minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. This garlic butter sauce is the star of the dish, delivering a tremendous punch of flavor.

  5. Now, get your slow cooker ready. Start by placing the halved baby potatoes at the bottom of the slow cooker. Once they are in, add the beautifully seared beef bites on top. This layering technique will allow the flavors to intertwine deliciously.

  6. Pour the garlic butter sauce over the beef and potatoes, ensuring everything is well coated. Then, add the beef broth to keep the dish moist as it cooks.

  7. Cover your slow cooker with the lid and set it to low for 6-8 hours or on high for 3-4 hours, depending on your available time. The goal here is to achieve fork-tender beef that practically falls apart with ease.

  8. Once the cooking time is up, let the dish rest for about 10 minutes. This allows the juices to settle, making every bite even more satisfying.
