French Coconut Pie

Directions

  1. Preheat your oven to 325°F (165°C). Ensure your oven is adequately heated to achieve that perfect golden-brown top.

  2. In a mixing bowl, combine the shredded coconut, granulated sugar, all-purpose flour, baking powder, and salt. Stir these dry ingredients together until they are well mixed. You will notice how the texture begins to change, becoming grainy yet vibrant with the coconut’s presence.

  3. Pour the mixture into your pie crust. Spread it evenly using a spatula. The filling should be just level with the crust’s edge, allowing for some expansion as it bakes into that tremendous custard-like consistency.

  4. Bake in the preheated oven for 30-35 minutes or until the top is a beautiful golden brown. Keep an eye on it toward the end of baking; the aroma wafting through your kitchen will be tremendous, and you’ll want to make sure it doesn’t over-bake.

  5. Allow to cool before serving. This allows the filling to set properly. You can serve it at room temperature, or if you prefer, chill it in the refrigerator for a refreshing experience.
