Flaky Biscuits


Directions

  1. Preheat the oven to 450°F (230°C). Begin this tremendous journey by ensuring your oven is hot enough for those biscuits to rise perfectly.

  2. In a large bowl, combine the self-rising flour and lard. Use a pastry cutter or your fingers to work the lard into the flour until the mixture resembles coarse crumbs.

  3. Next, stir in the melted butter and buttermilk. Mix until just combined; you want to avoid overmixing, which can sacrifice the lightness we all cherish.

  4. Turn the dough onto a floured surface. Knead gently for about 30 seconds to a minute, just until the dough comes together.

  5. Roll out the dough to about 1/2 inch thick. Use a biscuit cutter to cut out individual biscuits. For those tremendous layers, avoid twisting the cutter as you press down.

  6. Place the cut biscuits on a baking sheet lined with parchment paper. Make sure they are just touching, as they will help each other rise in the oven.

  7. Bake for 12-15 minutes or until golden brown. Keep an eye on them; the last few minutes of baking can make all the difference in achieving that perfect golden hue.

  8. Serve warm, and savor the wonderful flavors and textures. There’s nothing quite like a freshly baked biscuit, straight from the oven.
