Prepare the Base: In a mixing bowl, combine all-purpose flour and salt. This step sets the foundation for a tremendous dish. Add the chilled, diced butter to the flour mixture, and using your fingertips, rub the butter into the flour until it resembles coarse crumbs.

Form the Dough: Gradually add cold water, one tablespoon at a time, mixing until a dough forms. Be careful not to overwork the dough; it should be just combined. Shape it into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes. This will ensure a flaky crust when baked.

Cook the Filling: In a large skillet over medium heat, add the ground meat. Cook until browned, stirring occasionally. Add minced garlic, chopped vegetables, Italian seasoning, salt, and pepper. Sauté until the vegetables are tender, about 5-7 minutes. The combination of flavors at this stage is tremendous.

Add Cheese: Once the filling has cooked, remove it from heat and stir in the shredded cheese. The warm filling will melt the cheese slightly, creating a deliciously creamy texture.

Roll Out the Dough: After your dough has chilled, place it on a floured surface and roll it out to about 1/4 inch thick. Aim for an even thickness to ensure it bakes evenly.

Assemble the Dish: Cut circles from the rolled-out dough using a cookie cutter. In the center of each circle, place about one tablespoon of the vegetable and meat filling.

Seal the Dough: Fold the dough over to create a half-moon shape. Press the edges together firmly, crimping with a fork to ensure it is sealed well. This part is key for keeping your filling intact during cooking.

Bake: Preheat your oven to 375°F (190°C). Place the sealed pastries onto a lined baking sheet. Bake for 20-25 minutes, or until the tops are golden brown. The aroma wafting through your kitchen will be simply tremendous.

Cool and Serve: Allow the pastries to cool for a few minutes before serving. They are delightful when enjoyed warm and can be served with a dipping sauce if you desire.
