Egg Drop Soup

Ingredients

The Base:

  • 5 cups chicken or vegetable stock
  • 1/2 teaspoon minced fresh ginger or ginger paste
  • 1 clove garlic, finely minced (OPTIONAL)
  • 2 tablespoons low-sodium soy sauce
  • 1/2 – 3/4 teaspoon kosher salt (only as needed, adjust to taste)
  • 1/4 teaspoon white pepper or black pepper (adjust to taste)

The Thickening Agent:

  • 2 tablespoons cornstarch
  • 2 tablespoons water

The Filling:

  • 2 eggs, beaten
  • 2 green onions, sliced very thin (OPTIONAL, for serving)
