Easy Sweet Potato Egg Casserole

Directions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or butter to ensure your casserole doesn’t stick, making cleanup much easier.

  2. In a large bowl, combine the diced sweet potatoes, onion, and bell pepper. You want an even distribution, so stir well. Next, spread this tremendous mixture evenly in the prepared baking dish, making sure it covers the bottom properly.

  3. In another bowl, whisk together the eggs, milk, salt, and pepper. This mixture should be smooth and homogeneous. Pour the egg mixture generously over the sweet potato mixture, allowing it to seep into the crevices, which ensures that every bite is flavorful.

  4. Sprinkle the shredded cheese on top, creating a glorious, cheesy layer that will melt beautifully and form a delightful crust as it bakes.

  5. Bake for 30-35 minutes or until the eggs are set and the top is golden brown. You’ll know it’s done when a toothpick inserted in the center comes out clean, and that golden crust is simply irresistible.
