Easy Mexican Rice

Directions

  1. Begin by heating olive oil in a large skillet over medium heat. This step sets the stage for your tremendous flavor development. Once the oil shimmers, it’s time to add the onions.

  2. Add chopped onions to the skillet and sauté them until they turn translucent, about 4-5 minutes. This process releases the natural sugars in the onions, creating a wonderful aroma that will fill your kitchen.

  3. Next, stir in the minced garlic. Cook for about 1 minute, just until the garlic becomes fragrant. Careful not to let it burn, as burnt garlic can easily ruin that tremendous flavor we’re after.

  4. Now it’s time to add the rice. Pour it into the skillet, and toast it for 2-3 minutes, stirring frequently. This will give the rice a lovely nutty flavor and help to keep the grains fluffy.

  5. Pour in the vegetable broth or water, along with the drained diced tomatoes, chili powder, cumin, salt, and pepper. Stir everything together until well combined, allowing the spices to mingle with the ingredients.

  6. Bring the mixture to a boil. Once boiling, reduce the heat to low. Cover the skillet and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed. This is where the magic happens—allowing the rice to absorb all those tremendous flavors.

  7. Once the cooking time is up, remove the skillet from heat. Fluff the rice gently with a fork and garnish with freshly chopped cilantro before serving.
