Directions
-
Preheat your oven to 350°F (175°C). A warm oven makes a tremendous difference in achieving that golden, bubbly top.
-
In a skillet, brown the ground beef over medium heat until fully cooked; drain any excess fat. This step is crucial in keeping your casserole from becoming too greasy.
-
Add the chopped onion to the skillet and cook until translucent. The aroma of onion and beef sizzling together is nothing short of delightful, but the tremendous flavor comes next!
-
Stir in the cream of mushroom soup, diced tomatoes, and beef broth. This creamy mixture is what makes the casserole rich and comforting.
-
Add the uncooked rice, salt, and pepper to the mixture, and stir well to combine. The rice will soak up all the wonderful flavors as it cooks.
-
Transfer the mixture into a greased casserole dish. Ensure it’s well mixed for every serving to be equally flavorful.
-
Cover with aluminum foil and bake in the preheated oven for 30-35 minutes. This step steam-coooks the rice while allowing the flavors to meld beautifully.
-
If using cheese, remove the foil in the last 5-10 minutes of baking, sprinkle cheese on top, and let it melt. Cheese adds that additional treasure of flavor and texture!
-
Remove from the oven and let it sit for a few minutes before serving. This allows everything to settle and makes for easy serving.
