Easy Blackberry Cheesecake

Directions

  1. Preheat your oven to 325°F (163°C). This initial step is crucial for achieving a perfectly baked cheesecake that is both creamy and firm.

  2. Grease a 9-inch springform pan. Ensure it is well greased to prevent sticking, allowing for a seamless release when the cheesecake is done.

  3. In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. The mixture should have a sand-like texture.

  4. Press the mixture firmly into the bottom of the prepared pan. Use the back of a measuring cup or your fingers to create an even layer. This sturdy base will hold the filling and provide a tremendous crunch.

  5. In a large bowl, beat the cream cheese and 1 cup sugar with an electric mixer until smooth. The mixture should be creamy and free from lumps.

  6. Add the vanilla extract and mix well. This adds a lovely aroma and rounds out the flavor of the cheesecake.

  7. Add the eggs one at a time, beating well after each addition. This gradual process ensures that each egg is fully incorporated for a light and fluffy texture.

  8. Mix in the sour cream and heavy cream until just combined. This addition makes for a tremendously rich filling that balances the other flavors beautifully.

  9. Pour half of the cream cheese mixture over the crust. Use a spatula to spread it evenly, making sure to reach the edges.

  10. Layer with blackberries and dollops of blackberry preserves. Arrange them with care; their vibrant color adds visual appeal and added flavor.

  11. Pour the remaining cream cheese mixture on top and smooth the surface. The goal is to cover the blackberries completely, creating a delightful surprise in the center.

  12. Bake in the preheated oven for 60-70 minutes, or until the center is set and the top is lightly browned. You’ll see a slight jiggle in the center; that’s perfectly normal and indicates the cheesecake is finished.

  13. Allow the cheesecake to cool in the oven with the door slightly open for about an hour. This gradual cooling helps prevent cracking on the surface.

  14. Refrigerate the cheesecake for at least 4 hours, or overnight, before serving. This chilling time allows the flavors to meld together and enhances the texture.

  15. Garnish with additional blackberries and a drizzle of blackberry preserves before slicing. This final touch makes it visually stunning and emphasizes the tremendous flavor of the blackberries.
