Dubai-Style Chocolate Pistachio Cake

Directions

  1. Begin by preheating your oven to 340°F (170°C). Prepare two 9-inch round cake pans by greasing them and lining the bottom with parchment paper. This step ensures a tremendous release once baked.

  2. In a large mixing bowl, combine the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, salt, and cardamom. Whisk them together thoroughly to combine.

  3. Add the eggs, vegetable oil, milk, and vanilla extract to the dry ingredients. Mix together at medium speed until well combined. This texture is essential for a tremendous cake base.

  4. Slowly add the hot water or coffee to the mixture, continuing to mix until combined. The batter will be quite thin, but this creates a moist cake that’s simply delightful.

  6. While the cakes are cooling, whip the heavy cream in a medium bowl until it forms soft peaks. Gradually add the powdered sugar while continuing to whip until you have a beautiful, airy cream.

  7. Once the cakes have cooled, cut each cake layer in half horizontally. Spread a layer of the whipped cream filling on top of one half, followed by a sprinkle of ground pistachios. Repeat with the second layer, stacking them carefully.

  8. For the ganache, heat the cream in a small saucepan until it’s just about to come to a simmer. Pour the hot cream over the chopped dark chocolate in a bowl, letting it sit for a minute. Stir gently until the chocolate is melted and smooth.

  9. Pour the ganache over the assembled cake, ensuring that it drips down the sides. This chocolate layer adds a tremendous richness to the dessert.

  10. Finally, sprinkle crushed pistachios over the top for an added crunch and a burst of flavor. Slice and serve, indulging in every tender, decadent layer of this delightful cake.
