Directions
-
Begin by preheating your oven to 340°F (170°C). Prepare two 9-inch round cake pans by greasing them and lining the bottom with parchment paper. This step ensures a tremendous release once baked.
-
In a large mixing bowl, combine the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, salt, and cardamom. Whisk them together thoroughly to combine.
-
Add the eggs, vegetable oil, milk, and vanilla extract to the dry ingredients. Mix together at medium speed until well combined. This texture is essential for a tremendous cake base.
-
Slowly add the hot water or coffee to the mixture, continuing to mix until combined. The batter will be quite thin, but this creates a moist cake that’s simply delightful.
-
Pour the batter evenly into the prepared pans. Bake in the preheated oven for 30 to 35 minutes or until a toothpick comes out clean when inserted into the center. Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
-
While the cakes are cooling, whip the heavy cream in a medium bowl until it forms soft peaks. Gradually add the powdered sugar while continuing to whip until you have a beautiful, airy cream.
-
Once the cakes have cooled, cut each cake layer in half horizontally. Spread a layer of the whipped cream filling on top of one half, followed by a sprinkle of ground pistachios. Repeat with the second layer, stacking them carefully.
-
For the ganache, heat the cream in a small saucepan until it’s just about to come to a simmer. Pour the hot cream over the chopped dark chocolate in a bowl, letting it sit for a minute. Stir gently until the chocolate is melted and smooth.
-
Pour the ganache over the assembled cake, ensuring that it drips down the sides. This chocolate layer adds a tremendous richness to the dessert.
-
Finally, sprinkle crushed pistachios over the top for an added crunch and a burst of flavor. Slice and serve, indulging in every tender, decadent layer of this delightful cake.
