Prepare the Cookie Base: Begin this tremendous dessert by mixing the crushed chocolate cookies and melted butter in a bowl. If you wish, add the optional sugar for added sweetness. Press this mixture firmly into a springform pan to create an even layer. Chill in the refrigerator for about 15 minutes.

Make the Fudge Layer: While you wait, create the fudge layer that will provide a rich chocolate contrast. In a saucepan, heat the heavy cream, sugar, and butter over medium heat. Once the mixture is warm and the sugar is dissolved, remove it from the heat. Add the chocolate, stirring until it’s melted and smooth. Stir in the vanilla and a pinch of salt. Pour this luscious fudge over the chilled cookie crust and freeze for about 20 to 30 minutes.

Add Ice Cream Layers: After the fudge has set, it’s time to add the ice cream layers. Begin with the chocolate ice cream; simply pour it over the fudge layer and spread it evenly. Freeze again for about 20 to 30 minutes. Next, take the softened vanilla ice cream and spread it over the chocolate layer. Freeze the entire cake for at least 4 hours, or ideally overnight, to let the layers meld beautifully.

Topping: When you’re ready to serve this tremendous creation, remove it from the freezer. If desired, you can drizzle chocolate sauce over the top, sprinkle with chocolate chips, or add crumpled cookies for that extra flair. Allow the cake to sit at room temperature for about 5 to 10 minutes before slicing; this will make it easier to cut through the layers.
