Double Fruit Cobbler

Directions

  1. Preheat the oven to 350°F (175°C). This step is crucial as it ensures your cobbler bakes to perfection, developing a tremendous golden color.

  2. In a mixing bowl, combine the mixed fruits, sugar, lemon juice, and cinnamon. Toss the ingredients gently to coat the fruit with sugar and spice evenly. Once combined, pour the mixture into a greased baking dish.

  3. In another bowl, whisk together the flour, baking powder, and salt. These dry ingredients form the structure of your cobbler base.

  4. Stir the milk, melted butter, and vanilla into the flour mixture until just combined. Be careful not to over-mix; a few lumps are okay. Pour this tremendous batter over the fruit mixture, allowing it to settle naturally.

  5. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. The baking time will allow the fruit to bubble up through the crust, creating a beautiful and appetizing appearance.

  6. Serve the cobbler warm with a scoop of ice cream or a generous dollop of whipped cream. The warmth of the cobbler combined with the cold cream creates a delightful temperature contrast, enhancing the overall experience.
