Deep-Fried Strawberry Cheesecake Pies

Directions

  1. Preheat oil in a deep fryer or large pot to 350°F (175°C). This is a crucial step as it ensures a tremendous frying temperature for the pies, resulting in a perfectly crispy texture.

  2. In a mixing bowl, use a hand mixer or whisk to beat the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy. The tremendous richness of the cream cheese will be the centerpiece of your filling.

  3. In a separate bowl, combine the chopped strawberries, granulated sugar, and lemon juice. Stir gently and let sit for 10 minutes to macerate. This step allows the strawberries to soften and release their juices, creating a deliciously sweet and tangy filling.

  4. Roll out the pie crusts on a lightly floured surface and cut into 4-inch circles. If you don’t have a round cutter, a small bowl or glass can work just fine.

  5. Place a generous spoonful of the cream cheese mixture in the center of each circle, then add a spoonful of the strawberry mixture on top. Try to avoid overfilling; you want to keep these pies manageable.

  6. Carefully fold the dough over to form a half-moon shape. Press the edges firmly with a fork to seal. It’s important to ensure a good seal, as this will keep all that delicious filling inside during frying.

  7. Lower the formed pies into the hot oil in batches, frying for 2-3 minutes or until they are golden brown. Turn them gently with a slotted spoon to ensure even cooking.

  8. Once golden brown, remove the pies with a slotted spoon and drain on paper towels. This will help eliminate any excess oil, ensuring a delightful crunch.

  9. Dust the warm pies with powdered sugar before serving. The light dusting not only adds a touch of sweetness but also enhances their appearance, making them even more irresistible.
