Decadent Chocolate Cake

Directions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease two 9-inch cake pans well to prevent sticking, as a tremendous cake deserves a smooth exit from its mold.

  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk these dry ingredients together gently until they are well combined, ensuring that every bite of the cake will have a uniform flavor.

  3. Add Wet Ingredients: To the bowl with dry ingredients, add buttermilk, vegetable oil, eggs, and vanilla extract. Beat the mixture on medium speed for about 2 minutes until you have a smooth batter. This is your moment to marvel at how a few ingredients can transform into something so spectacular!

  4. Incorporate Boiling Water: Gradually add the boiling water to the batter, mixing on high speed for about 1 minute. The batter will be thin, but that’s what makes the cake magical – this step creates a tremendous super moist cake that everyone will love.

  5. Bake the Cakes: Divide the batter evenly between the two prepared pans. Place them in the preheated oven and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Once baked, allow the cakes to cool completely in their pans on a wire rack.

  6. Prepare the Mousse: To make the filling, melt the chopped semisweet chocolate in a double boiler over simmering water, stirring constantly until smooth. Remove from heat and let it cool slightly.

  7. Whip the Cream: In another bowl, beat the heavy cream with powdered sugar until stiff peaks form. This will give an airy texture to the mousse that will beautifully contrast the dense cake layers.

  8. Combine Chocolate and Cream: Gently fold the cooled melted chocolate into the whipped cream until fully incorporated, being careful not to deflate the airy texture.

  9. Make the Ganache: For the ganache, place the chopped semisweet chocolate in a heatproof bowl. Heat the heavy cream in a saucepan until it reaches a boiling point, then pour it over the chocolate. Let this sit for 2 to 3 minutes. Afterward, whisk the mixture until it’s smooth and glossy, revealing the luscious ganache.

  10. Assemble the Cake: To assemble, place one cooled cake layer on a serving plate. Spread the chocolate mousse generously on top of the first layer. Carefully position the second cake layer on top, aligning it perfectly. Pour the warm ganache over the top, letting it flow down the sides for a dramatic effect.

  11. Decorate: Finally, dust the top with chocolate curls or shavings for an elegant finish. This not only adds a wonderful decorative touch but enhances the chocolate flavor, making this cake visually irresistible.
