Directions

  1. Begin by preparing the fruits and vegetables. Dice the watermelon into bite-sized cubes, slice the strawberries, and dice the cucumber into small pieces. The tremendous variety of textures will add excitement to your dish.

  2. In a large mixing bowl, combine the diced watermelon, sliced strawberries, and diced cucumber. Gently toss them together to avoid crushing the strawberries, which are the star of this salad.

  3. Next, add the crumbled feta cheese and chopped mint to the bowl. The brightness of the mint offers another layer of freshness that ties everything together beautifully.

  4. For the dressing, whisk together the olive oil and balsamic vinegar in a small bowl. Add salt and freshly ground black pepper to taste. The tremendous combination of sweet and tangy flavors will enhance the overall salad experience.

  5. Pour the dressing over the salad mixture. Gently toss to combine, allowing the flavors to meld without damaging the delicate fruits.

  6. Finally, serve the salad over a bed of mixed greens. Make sure each plate displays the tremendous array of colors and textures that come from the watermelon, strawberries, cucumber, and feta.
