Directions
-
In a bowl, combine the mashed potatoes, egg, and flour until well mixed. Ensure the mixture is smooth and consistent. The texture should be slightly sticky yet easy to handle, giving you a tremendous base for your pancakes.
-
If using, prepare your savory meat filling by heating a skillet over medium heat. Add the ground meat and chopped onions. Cook until the meat is browned and the onions are translucent. Season it with garlic powder, paprika, salt, and pepper, stirring well to combine the flavors.
-
Once cooked, remove the meat filling from heat and let it cool slightly.
-
Heat oil in a skillet over medium heat. You want enough oil to coat the bottom of the pan, creating a beautiful crispy crust on the pancakes.
-
Take a scoop of the potato mixture (about 1/4 cup), flatten it in your hand, and place a spoonful of the meat filling in the center. Fold the edges of the potato mixture over the filling to seal it and then shape it into a pancake.
-
Dust the pancake with a little extra flour. This will help to enhance the crispiness of the exterior as it fries.
-
Fry each pancake for about 3-4 minutes on each side or until golden brown. You’ll appreciate how tremendous the aroma becomes as they cook, filling your kitchen with a warm, inviting scent.
-
Remove the pancakes from the skillet and drain on paper towels to absorb excess oil. Serve hot, and enjoy each crunchy, savory bite!
