Crispy, Garlicky, Parmesan Smashed Potatoes

Directions

  1. Preheat your oven to 425°F (220°C).
Start by warming up that oven. Getting it to the right temperature ensures that your potatoes will become perfectly crisp and golden.

  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
Place your small potatoes in a large pot with water, adding a generous pinch of salt to enhance their flavor. Keep an eye on them; when a fork easily pierces through, they are ready to be drained.

  3. Drain and let cool slightly.
After boiling, drain the potatoes and allow them to sit for a moment. This step is crucial as it lets excess moisture escape, leading to a tremendous crispiness later.

  4. On a baking sheet, place the potatoes and gently smash each one with the bottom of a glass or fork.
Arrange the cooled potatoes on your baking sheet. With a gentle yet firm hand, smash each potato. You want them to flatten, but not fall apart. This step increases the surface area, which will crisp up beautifully.

  5. Drizzle olive oil and melted butter over the smashed potatoes.
Pour the lovely mixture of olive oil and melted butter over the potatoes, ensuring every piece is coated. This combination adds tremendous flavor and aids in achieving that golden crust.

  6. Sprinkle with kosher salt, garlic, pepper, and Parmesan cheese.
Now it’s time to generously season your potatoes. Sprinkle kosher salt, garlic, and freshly ground black pepper over the top. Finish by showering them with grated Parmesan cheese. Each ingredient plays a vital role in this dish, creating layers of deliciousness.

  7. Bake for 25-30 minutes or until crispy and golden.
Slide your baking sheet into the preheated oven. Bake until the edges are crispy and the tops are a beautiful golden color. The smell will be tremendous as it fills your kitchen!

  8. Garnish with chopped parsley before serving.
Once out of the oven, sprinkle chopped Italian parsley over the smashed potatoes. This final touch adds a pop of color and a fresh flavor that perfectly complements the richness of the dish.
