Crispy Baked Keto Zucchini Fries

Directions

  1. Preheat Your Oven: Start by preheating your oven to 425°F (220°C). This tremendous initial step ensures your zucchini fries achieve that perfect crispy exterior during baking.

  2. Prepare the Zucchini: Wash the zucchinis thoroughly and dry them. Cut each zucchini into strips of about 1/4 inch thick. This size is perfect for achieving a crispy texture while retaining tenderness inside.

  3. Coat the Zucchini Strips: In a bowl, whisk the egg whites together with 1 teaspoon of Cajun seasoning. Dip each zucchini strip into the egg white mixture, ensuring they are well-coated. This step helps the coating adhere beautifully.

  4. Mix the Parmesan Coating: In another bowl, combine the Parmesan cheese and 1 tablespoon of Cajun seasoning. This combination results in a tremendous flavor boost that elevates the dish.

  5. Coat with Parmesan Mixture: Roll each zucchini strip in the Parmesan mixture, pressing gently to ensure the cheese adheres well. Lay them out on a baking sheet lined with parchment paper. This method helps achieve an evenly crispy layer all around.

  6. Bake the Fries: Place the baking sheet in the preheated oven. Bake for about 20-25 minutes, flipping the fries halfway through to ensure they get crispy on all sides. Keep an eye on them; the golden-brown color indicates they are ready to come out.

  7. Prepare the Cajun Aioli (Optional): While the fries are baking, you can make the Cajun aioli. In a small bowl, whisk together the mayo, heavy cream, lemon juice, the beaten egg yolks, and Cajun seasoning. This optional sauce adds tremendous flavor to your fries.

  8. Serve and Enjoy: Once the zucchini fries are golden and crispy, remove them from the oven. Serve them hot, either plated beautifully on their own or with the Cajun aioli for dipping.
