Creamy Red Pepper Pasta with Burrata and Herbs

Directions

  1. Start the pasta water: Begin by bringing a large pot of salted water to a rolling boil. This will ensure quick cooking of the pasta later on, enhancing your timing and efficiency.

  2. Cook the aromatics: In a large Dutch oven, heat the olive oil over medium heat. Add the sliced shallots and sauté for about 2 to 3 minutes until they are golden and fragrant, creating a tremendous base for your sauce.

  3. Add peppers and herbs: Stir in the thinly sliced red bell peppers along with the fresh thyme, oregano, and rosemary. Season generously with Kosher salt and freshly cracked black pepper. Cook for 15 to 18 minutes, stirring occasionally, until the peppers are soft and beautifully caramelized.

  4. Build the sauce: Add the minced garlic to the pot, followed by the balsamic vinegar. Allow this mixture to cook for about a minute, letting the vinegar reduce slightly and the garlic release its tremendous aroma.

  5. Simmer with stock: Carefully pour in the vegetable stock, bringing the mixture to a gentle simmer. Let it cook for an additional 5 minutes while you prepare the pasta.

  6. Cook the pasta: Drop the linguine into the boiling salted water. Cook for one minute less than the package instructions for an al dente texture, ensuring the pasta will soak up the delicious sauce beautifully.

  7. Blend the sauce: Remove the herb stems from the pot and stir in the heavy cream. Transfer the entire mixture to a high-speed blender. Blend on high until the sauce is smooth and silky, about 90 seconds.

  8. Combine everything: Drain the cooked pasta and return it to the pot. Pour the creamy red pepper sauce over the linguine, then sprinkle in the grated parmesan cheese. Toss everything together over low heat until the pasta is well coated and the cheese has melted into the sauce.

  9. Finish and serve: Stir in the chopped fresh parsley for an added hit of flavor and freshness. Plate the pasta, generously topping each serving with torn pieces of burrata cheese. For a finishing touch, drizzle a little olive oil and sprinkle with extra parmesan and herbs if desired.
