Ingredients

The Base

  • 4 cups corn kernels (fresh, frozen, or canned & drained)
  • 2 tablespoons butter
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded Monterey Jack or Mexican-blend cheese

The Filling

  • 1/2 cup crumbled cotija or feta cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Salt, to taste

For Garnish

  • Chopped fresh cilantro
  • Extra chili powder or Tajín, for topping
