Creamy Lemon Feta Pasta Recipe

Ingredients

The Filling

  • 4 cloves garlic (minced)
  • 6 oz. asparagus (about 12 spears, woody ends removed and cut into 1½ inch pieces)
  • 1 tbsp extra virgin olive oil
  • Salt and pepper (to taste)
  • Zest and juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 cup feta cheese (crumbled, preferably Saputo)

  • 1/2 cup chopped parsley

The Base

  • 3 tbsp butter
  • 2 cups heavy cream
  • 1 tbsp flour
  • 2 tbsp water
  • 400 g cooked linguine pasta

Directions

  1. Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until it is just shy of al dente. This method ensures your pasta will have the perfect texture when combined with the sauce. Reserve ½ cup of the pasta water before draining the noodles, setting them aside for later.

  2. Prepare the Feta Sauce: In a medium mixing bowl, whisk together the lemon zest, juice, and 1/4 cup extra virgin olive oil until well combined. Next, add the crumbled feta and a pinch of black pepper. Whisk this mixture until it reaches a creamy, somewhat uniform texture. This step lays the foundation for the tremendous creaminess that will coat the pasta beautifully.

  3. Cook the Asparagus: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the minced garlic and sauté for about a minute, until it becomes fragrant. Introduce the asparagus pieces to the skillet, seasoning them with salt and pepper. Cook for about 5-7 minutes, until they are tender-crisp.
