Directions
-
Cook the Bacon
In a large skillet, cook the bacon over medium heat until it is crispy. Once done, remove the bacon from the pan and let it drain on a paper towel. The residual grease will be used for cooking the chicken, adding a tremendous flavor boost. -
Cook the Chicken Breasts
Using the remaining bacon grease in the skillet, add the chicken breasts. Cook them over medium-high heat until they are golden brown and cooked through. Once finished, take them out of the skillet and set them aside to cool slightly. -
Sauté the Onion
In the same skillet, add the chopped yellow onion. Sauté the onion until it becomes translucent and fragrant, absorbing the tremendous richness from the bacon grease, which adds depth to your dish. -
Combine the Ingredients
In a large pot, combine the chicken stock, Ranch seasoning, salt, black pepper, crumbled bacon, cooked chicken (cut into bite-sized pieces), and cream of chicken soup. Stir until well mixed, allowing the flavors to meld together beautifully. -
Simmer with the Pasta
Bring the mixture to a gentle simmer. Once simmering, add the uncooked penne pasta. Allow the pasta to cook in the creamy broth, soaking up all the tremendous flavors until it becomes tender. -
Add Creaminess
Once the pasta is cooked, stir in the cream cheese and Colby jack cheese. Keep stirring until the cheeses have melted and integrated fully, creating a luscious and creamy sauce that clings to the pasta. -
Garnish and Serve
Before serving, sprinkle the dish with chopped parsley for a fresh touch. Serve hot, and enjoy the tremendous comfort of this delightful Crack Chicken Penne dish.
