Country Ranch Green Beans and Potatoes with Bacon

Directions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. This step brings tremendous flavor as the fat renders and creates a lovely base for the dish. Remove the crispy bacon and set it aside, keeping the drippings in the pot.

  2. Add the diced onion and minced garlic to the pot. Sauté them until the onion becomes translucent, which should take about 3-5 minutes. The tremendous aroma of onions and garlic cooking together adds depth to the flavor profile.

  3. Stir in the baby potatoes, ranch seasoning mix, chicken broth, thyme, rosemary, salt, and pepper. Bring the mixture to a boil, ensuring every potato is coated with the incredible seasonings.

  4. Once boiling, reduce the heat and cover the pot. Cook for about 10-15 minutes, or until the potatoes are tender. The steam will work wonders in softening the potatoes, making them creamy and delicious.

  5. Add the green beans to the pot and cook for an additional 5-7 minutes, or until they are tender but still crisp. This step is crucial; you want the green beans to maintain their crunch, adding a fantastic texture to the dish.

  6. If using, drizzle with olive oil and give it a gentle stir to combine. The olive oil will enhance the overall richness of the dish.

  7. Serve warm, topped with the crispy bacon you set aside earlier. The bacon adds a delightful crunch that perfectly complements the soft potatoes and crisp green beans.
