Cotton Candy Cake

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans to ensure easy release.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside as it will play a major role in providing structure to your cake.

  3. In a large bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy, an important step that creates a tender cake.

  4. Add the eggs one at a time, making sure to beat well after each addition. Stir in the vanilla extract for that classic flavor that pairs beautifully with the cotton candy.

  5. Now, it’s time to bring it all together! Alternately add the flour mixture and whole milk to the butter mixture, beginning and ending with the flour. Mix just until combined, taking care not to overmix to maintain the cake’s light texture.

  6. Divide the batter evenly into two bowls. To one bowl, add the cotton candy flavored syrup. In this bowl, add a few drops of pink food coloring to create a sweet pastel hue. In the second bowl with the plain batter, add blue food coloring, gently folding in the coloring until you achieve the desired shades.

  7. Pour the pink batter into one cake pan, the blue batter into another, and leave the third pan with the plain batter. This vibrant layering creates the delightful visual appeal of your cake.

  8. Bake the cakes for about 25-30 minutes, or until a toothpick inserted in the center of each comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely, ensuring they are set before frosting.

  9. Once your cakes are cooled, level the tops if necessary for even stacking. Spread a generous layer of buttercream frosting on the pink layer, stacking the blue layer on top. Spread more frosting before placing the plain cake atop.

  10. Using a spatula, frost the entire cake with a thin crumb coat to seal in any loose crumbs. Then, chill for about 15 minutes. After chilling, apply a thick layer of buttercream frosting over the entire cake, smoothing it to your preference.

  11. Just before serving, garnish the top of the cake with whimsical tufts of fresh cotton candy, adding a delightful finish to this already tremendous dessert.
