In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned. Make sure to break apart the beef as it cooks to achieve an even consistency. Once cooked, drain excess grease to ensure the filling doesn’t become overly greasy.

Stir in the can of chili, seasoning to taste with salt and pepper. Allow it to heat through, ensuring all flavors meld together nicely. This step is where the tremendous flavor really begins to develop, as the rich chili enfolds the seasoned beef.

Warm the flour tortillas in a microwave or a dry skillet until they are pliable. This will make rolling them much easier and help prevent tearing.

Place a generous spoonful of the chili-beef mixture in the center of each tortilla. Sprinkle with shredded cheddar cheese, allowing the cheese to melt slightly in the warm filling.

Roll the tortillas tightly, starting from one end and folding in the sides before sealing. Serve immediately, optionally topping with more shredded cheese or your favorite salsa.
