- Preheat your oven to 350°F (175°C) and grease a baking dish. This step is crucial as it ensures your bars will not stick to the dish, allowing for a clean release once baked.
- In a mixing bowl, combine flour, baking powder, and salt. Mix them thoroughly and set this mixture aside. This combination will give the cake structure while keeping it light and fluffy.
- In another bowl, whip the heavy cream and sugar until soft peaks form. This is a tremendous way to incorporate air into the cream, providing a fluffy texture that elevates the overall dessert.
- Gently fold in the flour mixture along with the shredded coconut and vanilla extract until just combined. Remember, overmixing can lead to a dense cake, so be gentle to maintain the airy consistency.
- Pour the batter into the prepared baking dish, spreading evenly and smoothing the top for an even bake.
- Bake for 25–30 minutes or until a toothpick comes out clean when inserted into the center. The smell that fills your kitchen will be tremendous, hinting at the delicious bars soon to come.
- Allow to cool before cutting into bars. This is a vital step, as cutting too soon can lead to your bars crumbling.
- Optionally, you can top with additional shredded coconut before serving for an extra boost of flavor and texture.
