Coconut Cake Roll

Directions

  1. Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper to prevent sticking. This step is crucial for achieving a perfect roll, so take your time and do it well.

  2. In a large bowl, combine the flour, sugar, baking powder, and salt. These dry ingredients will form the base of our cake, so ensure they are well mixed to distribute the leavening evenly throughout the batter.

  3. In another bowl, whisk together the eggs, milk, and vanilla extract until everything is combined. The eggs should be well beaten; this will help to create a tender and fluffy cake.

  4. Gradually mix the wet ingredients into the dry ingredients until just combined. Be careful not to overmix, as this can lead to a denser cake. As you incorporate the mixture, fold in the shredded coconut gently, inviting a wonderful texture into your roll.

  5. Pour the batter into the prepared pan and spread it evenly using a spatula. Make sure to reach the corners of the pan for uniform baking and an aesthetically pleasing shape.

  6. Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean. The cake should be springy to the touch, indicating it is perfectly baked.

  7. Remove from the oven and let it cool for a few minutes. This cooling stage is important to prevent the cake from crumbling when you start to roll it.

  8. Carefully roll the cake with the parchment paper from the shorter side. Roll it tightly but gently, as this will future-proof the cake’s structure when it holds the filling. Let it cool completely while in the roll to keep its shape.

  9. Unroll the cake once cooled and spread the coconut cream evenly over the top. This coconut cream is what brings lusciousness to your roll—don’t be shy in spreading it out!

  10. Roll the cake back up gently, starting from the shorter side again. It’s important to be delicate throughout this process to maintain the integrity of the cake.

  11. Refrigerate for at least 1 hour before serving. This will help set the filling and enhance the flavors, creating that tremendous coconut experience we all love.
